THE STORY OF THE PIG & PANTRY
This is Jordan Lohneis, chef, butcher and founder of Pig & Pantry and when most of the rest of us were watching Saturday morning cartoons he was in the family kitchen experimenting with recipes he saw on Urban Peasant. Luckily for us, he’s learned a lot since then.
For this Saskatoon native those early experiments laid the foundation for a culinary adventure that took him straight out of high school and into professional kitchens throughout the city, and then around the world. From pizza parlours and hotel cafes to renowned Michelin starred restaurants in the heart of London, England, Jordan has continuously honed his craft.
Jordan returned to Saskatoon in 2013, where he helped open the acclaimed Ayden Kitchen & Bar and aided in the development of their legendary charcuterie program.
Throughout his travels one thing become very clear to Jordan: the best food starts with the best ingredients. Working in restaurants gave him access to the best local products, produce and meat, but finding the same quality ingredients to cook with at home was almost impossible. Thus was born The Pig & Pantry.
Starting off in a church kitchen with a tiny little cooler and basic Bradley smoker, Jordan focussed on making high quality, handmade products using local partners and ethically raised livestock to make globally inspired artisanal goodies for everyone.
A few years – and a lot of sausages – later Jordan opened the doors to his new butcher shop in the heart of Saskatoon.
