Position title: Butcher

Job description: This position is for a passionate individual who is looking to deepen their culinary knowledge and experience in the field of whole animal butchery. The right candidate has good knife skills and some related experience either in the butcher or restaurant industry. This person will be responsible for cutting pork, beef, chicken and lamb, as well as further processing some cuts into sausages, broths, meat pies and more. This all encompassing butcher position covers all aspects of animal butchery to create a multitude or fantastic products.
Responsibilities & Duties:
- Cut and debone beef, pork, lamb and chicken from whole carcasses according to company specifications and customer requests
- Cut and trim steaks, season and tie roasts
- Communicate with customers about meat selection, cooking instructions and other recipe and ingredient information
- Receive deliveries of meats and other foods
- Measuring and scaling spices, vegetables, meats and other ingredients for artisan sausages according to recipes
- Grinding, mixing, stuffing, linking and smoking sausages
- Curing and smoking bacons, hams and other meats
- Prepare, measure and cook prepared items such as curries, broths, meat pies and other items according to company recipes
- Maintain cleanliness and organization of kitchen area
- Communicate and work in coordination with other butchers, prep cooks and front of house staff
- Manage and maintain inventory of spices, produce, meats and other kitchen items
- Adhere to all food safety guidelines
- Take meat orders from customers and communicate information to all necessary departments
Requirements:
- Minimum two years experience cutting and deboning whle carcasses of pork, beef, lamb and chicken
- Minimum two years experience in a cook or chef position in a restaurant or similar setting
- Physically fit, with the ability to lift 50lbs or more on a regular basis
- Ability to be on their feet for extended periods of time
- Excellent communication skills, both written and verbal
- Ability to follow and complete recipes correctly
- Excellent knife skills
- Able to follow directions correctly to achieve desired results
- Able to problem solve when troubleshooting scenarios arise
