Position title: Head Butcher

Employment Type: Full-time

Job Description: This position is for an experienced butcher with good organization and communication skills to lead our team of whole animal butchers. This person cuts all meats, as well as delegates tasks and coordinates with other butchers and departments to ensure the smooth operation of the butcher shop and complete customer satisfaction in the area of meat quality and selection.

Responsibilities & Duties:

• Cut and debone pork, beef, lamb and chicken from whole carcases, according to company specifications
• Teach and pass skills to other butchers and related colleagues
• Maintain production efficiency within the butcher shop
• Maintain communication with front of house and other related employees with all information regarding meat production
• Receive deliveries of meats and other foods
• Measure and scale spices, vegetables, meats and other ingredients for artisan sausages according to recipes
• Recipe development
• Grinding, mixing, stuffing, linking and smoking sausages
• Curing and smoking bacons, hams and other meats
• Prepare, measure and cook prepared items such as curries, broths, meat pies and other items according to company recipes
• Maintain cleanliness and organization of kitchen area
• Manage and maintain inventory or spices, produce, meats and other kitchen items
• Adhere to all food safety guidelines
• Discuss directly with customers about meat sources, cut selections and recipe recommendations
• Take orders from customers and communicate with all necessary departments

Requirements:

• Minimum three years experience cutting and deboning whole carcasses of pork, beef, lamb and chicken
• Minimum two years experience in a supervisory or management role in either a butcher shop or restaurant
• Excellent knife skills
• Physically fit
• Able to lift 50lbs or more on a regular basis
• Able to be on their feet for extended periods of time
• Excellent communication skills, both written and verbal
• Excellent organizational skills
• Ability to problem solve and troubleshoot when problems arise
